The Shopping List: cornmeal, milk, egg, butter

Preheat the oven to 350°

In a mixing bowl, combine:
1 1/2 cup cornmeal
2 1/2 cup flour
1/2 cup sugar
1 teaspoon salt
2 tablespoons baking powder

In a separate bowl, combine:
2 eggs
1 1/2 cup milk
1/2 cup light tasting olive oil or melted butter*

Mix the dry ingredients into the wet ingredients. If using butter add it last after combining wet and dry ingredients. Bake at 350° for 20-30 minutes or until golden brown.

This is delicious sliced and topped with applesauce for breakfast.
