In a large bowl mix combine:

heaping cups cooked quinoa
3/4 cup shredded cheddar cheese
1/2 cup  cottage cheese
1 grated carrot
3 eggs
3 tablespoons unbleached white flour
2 scallions
1/4 teaspoon black pepper
1/4 teaspoon ground cumin
1/8 teaspoon salt
1/8 teaspoon garlic powder

Press into cakes and cook on a griddle.  Flip when golden brown.  Approximately 4 minutes per side.

To cook quinoa:

1 cup quinoa
2 cups water
½ teaspoon salt
